Eating Salmon week after week puts the pressure of coming up with new recipe ideas while trying to keep it simple but flavorful. Wild king salmon is so mouthwateringly delectable that very little is needed to enhance the wholesomeness of this meal.

I had cilantro from my csa share and I made a simple aioli blending it with greek yogurt, garlic, fresh lemon juice, sriracha chile sauce and sea salt.

I made a salsa with my tomatoes, onions, corn, Jalepenos, cilantro and sea salt.

I put all of it together on my GF corn tortillas and my brand new salmon tacos were ready!

Spicy Pesto

When Basil season in here, you have to come up with new ideas of using this flavorful herb. Nothing new about using pesto, but what if you added a spicy twist to boring pesto? You will be surprised at how many different recipes  you can really use this spicy pesto. Add it to boring pasta or chicken, Burgers or wraps, heat will jazz up the flavors.

Easy vegetable pad thai

My struggle to come up with gluten free ideas continues, vegetable pad thai, a great side dish with Salmon. I bought some wide rice noodles from an asian store some time ago, I figured it would be a good alternative to rice or quinoa. Lots of peppers, broccoli and red onions, scallions and sprouts, Pad thai can be really heart healthy and colorful. Peppers are a very high source of Vitamin C and other antioxidants,One small red, yellow or orange pepper provides three times the recommended daily allowance of vitamin C; way ahead of citrus! Red peppers stand out as one of the few foods that contain lycopene, a carotenoid that lowers the risk of various cancers, including prostate and cervical cancer. These crimson packages are also packed with beta-carotene, converted to vitamin A in the body and essential for night vision. Nature’s best source of zeaxanthin, a compound known to protect against cataracts and macular degeneration, can be found in orange peppers.

Pesto Fajitas

pesto-fajita-1If you have some corn tortillas handy, this is an easy dinner to put together on a week night. I had some left over grilled chicken, some fresh red and green peppers and a spicy pesto sauce. I had made the pesto sauce earlier in the week from my fresh CSA basil and hot oil. It was time to create a dinner out of theses ingredients. This can be served with a side of mexican rice, beans and Guacamole.
